Keto Friendly Instant Pot Zucchini Basil Soup

Are you all about that Instant Pot? How could you NOT be? This wonderous multicooker makes it easy to cook recipes that taste like you slaved over them all day — perfect for busy people, lazy people, or both!  We teamed up with our friends at Primal Kitchen for their June Keto Reset Month and created this super easy, zucchini basil soup that's not only delicious, it's KETO approved! Who could ask for anything more! 

INGREDIENTS:

  • 600 g organic zucchini (peeled and diced into 1/2 inch cubes)
  • 3 Tbl. Primal Kitchen® Avocado Oil
  • 1 shallot, chopped into chunks
  • 2 large garlic cloves, chopped into chunks
  • 1 ½ teaspoon Himalayan salt
  • 1 Package Bonafide Organic Chicken Bone Broth (24oz)
  • 1 large handful fresh basil (35 g)
  • 1 can organic full fat coconut milk
  • Optional and highly recommended: extra diced zucchini and bacon top

INSTRUCTIONS:

  • Heat Instant Pot to Saute setting and drizzle in avocado oil
  • Saute scallion and garlic until translucent
  • Sprinkle in 1/2 tsp salt
  • Add in chopped zucchini, coconut milk, and bone broth
  • Cook on Manual High for 5 minutes
  • Puree (or immersion blend) soup until smooth
  • Add in basil and blend (now feel free to add another 1 tsp salt at this point, or to taste)
  • Chill in a mason jar (also can be served hot!)
  • Serve and top with optional zucchini and bacon
