Stuffed Bell Pepper Soup

This stuffed bell pepper soup puts a twist on the classic stuffed bell pepper by adding jalapenos for some spice and ground turkey instead of ground beef. The great thing about this recipe is that you can really use any vegetable that you have on hand!

INGREDIENTS

  • 1 lb Buy Ranch Direct ground turkey
  • 1/2 cup diced onion
  • 1 jalapeño deseeded
  • 1 tbsp avocado oil
  • 3 red bell peppers
  • 1 large zucchini
  • 1/2 cup chopped cilantro
  • 1 tbsp Primal Palate super gyro seasoning
  • 1/2 tsp turmeric
  • 1/4 tsp smoked paprika
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • Salt and pepper to taste
  • 1 package Bonafide Provisions turkey bone broth + 1 cup filtered water

INSTRUCTIONS

  1. Heat pot with avocado oil
  2. Add onion, jalapeños, and salt and pepper and cook for 5-7 minutes
  3. Add in bell peppers and cook another 3-5 minutes
  4. In a separate pan cook your ground turkey with the seasoning
  5. Add cooked ground turkey to veggie mixture
  6. Add Bone broth, water, chopped zucchini, and cilantro to the pot
  7. Bring to a boil and simmer covered for 30 minutes
